SOY IS EVIL, BUT NOT WITH SOLUBLE FIBER. Funny how the first 20 or so websites that come up when you search for soy are all based around the fact that even sitting in the same room can be deadly. Of course, this is flying in the face of heavily dominant soy-positive medical literature. But of course, this is non-GMO, non processed soy (no veggie burgers or Tofurky).
One of the things anti-soy people talk about is the “anti-nutrients” in soy such as phytic acid and that phytic acid attaches to minerals and keeps them from being absorbed. Well, so does tea and flaxseed, but you don’t see website after website demonizing them. Anyway, in this study, the authors find that fructo-oligosaccharides (FOS) such as those in soluble fiber actually help with mineral absorption and counteract the “anti-nutrient” effect of soy. So, shockingly, a healthy diet containing soluble fiber and soy would actually have an overall very positive effect. Who would’ve thunk it?
