Geez. Where do we start with this one. The benefits of an alkaline diet (more plant based) vs acidic diet (animal, processed based) have been espoused for years. But sometimes we think of it in general terms, much like stress being bad for us. But every so often studies come out like this one that really bring the concept to the forefront and attach some specifics. Also, certain minerals like potassium (once again found in higher levels in a plant based, unprocessed diet) act as buffers, and reduce the acidity of the diet.
